  • 1/2 cup pure maple syrup
  • 1/2 cup unsweetened applesauce
  • 3 cups old-fashioned oats
  • 1 teaspoon baking powder
  • 1 and 1/2 teaspoons cinnamon powder
  • 1/4 teaspoon nutmeg powder
  • 1 generous cup chopped peeled apple
  • Optional: chopped walnuts or pecans

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, whisk together the milk, eggs, maple syrup, and applesauce until smooth.
  3. In another bowl, mix the oats, baking powder, cinnamon, nutmeg, and salt.
  4. Combine the wet ingredients with the dry mixture and fold in the chopped apples (and nuts if using).
  5. Scoop the mixture into muffin tins lined with paper liners or greased well, filling each about three-quarters full.
  6. Bake for about 28 minutes until golden brown.
