  • 2 cups water
  • 1 cup diced red bell pepper
  • 1 cup diced cucumber
  • 1 cup shredded carrots
  • 1 cup sliced green onions
  • 1/2 cup chopped fresh cilantro
  • 1/2 cup chopped peanuts
  • 1/4 cup sesame seeds
  • 1/4 cup soy sauce
  • 2 tablespoons lime juice
  • 1 tablespoon honey
  • 1 tablespoon sesame oil
  • 1 teaspoon grated fresh ginger
  • 1 clove garlic, minced
  • Salt and pepper to taste

Instructions

  1. Rinse and drain quinoa. In a saucepan, combine with water and bring to a boil. Reduce heat, cover, and simmer for 15 minutes until fluffy. Cool completely.
  2. In a large bowl, mix diced bell pepper, cucumber, carrots, green onions, and cilantro.
  3. Whisk together soy sauce, lime juice, honey, sesame oil, ginger, garlic, salt, and pepper in a small bowl.
  4. Once quinoa has cooled, add it to the veggie mix and pour over the dressing. Toss gently to combine.
  5. Chill in the refrigerator for at least 30 minutes before serving.
