  • ½ pound turkey strips (cut into small dice)
  • 3 medium shallots (halved and thinly sliced; about 1 cup)
  • 1 teaspoon Dijon mustard
  • 16 ounces frozen peas
  • 1 pear (peeled, sliced, and diced)
  • 1 lemon (zested and juiced; about 3 tablespoons juice and 1 teaspoon zest)
  • ½ cup roughly chopped parsley
  • Freshly ground black pepper (to taste)

Instructions

  1. Prepare the pear by peeling, slicing, and dicing it. Toss with lemon juice immediately to prevent browning.
  2. In a skillet over medium heat, cook the turkey strips until golden brown. Remove with a slotted spoon.
  3. Add the shallots to the same skillet and sauté for about one minute until softened. Stir in the Dijon mustard.
  4. Add the peas and pears to the skillet; stir until heated through, about five minutes.
  5. Turn off heat, fold in half of the crispy turkey strips along with parsley and black pepper.
  6. Transfer to a serving bowl, topping with remaining turkey strips and garnish with lemon zest.
