  • 1 can (15.25 oz) sweet corn, drained
  • 2 cans (4 oz each) mild green chilies
  • 8 oz cream cheese, softened
  • 1/3 cup half-and-half
  • 3 tablespoons butter
  • 2 teaspoons hot sauce
  • 1 large jalapeño pepper, seeded and diced
  • 1 yellow onion, diced

Instructions

  1. Mix all spices in a bowl.
  2. Sauté onions and jalapeños in butter until softened.
  3. Gradually add chicken broth and half-and-half.
  4. Optionally blend some beans with broth for a thicker texture.
  5. Stir in seasonings, hot sauce, green chilies; bring to a boil then simmer for 15 minutes.
  6. Add seasoned chicken and corn; simmer uncovered for another 15-20 minutes.
  7. Shred cooked chicken and return it to the pot.
  8. Stir in cream cheese until melted; serve hot.
