  • 1 large boneless turkey breast half (about 2 1/2 lbs)
  • 5 ounces whole wheat French bread (cut into cubes)
  • 1 medium onion (minced)
  • 1 large stalk celery (minced)
  • 4 fresh sage leaves (minced)
  • 1/4 cup chopped parsley
  • 3/4 cups chicken broth
  • 2 tablespoons dried cranberries (chopped)
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C). Lay turkey breast skin-side down on a cutting board and sprinkle with kosher salt.
  2. In a skillet, melt butter over medium heat. Sauté onion and celery until soft, then stir in sage, parsley, poultry seasoning, salt, pepper, bread cubes, and chicken broth. Mix in cranberries.
  3. Spread stuffing over the turkey breast and roll tightly into a log shape. Secure with cooking twine.
  4. Place in a baking dish seam-side down, brush with softened butter, cover with foil, and bake for about 60 minutes.
  5. For gravy, combine turkey broth with sage leaves and poultry seasoning in a saucepan over medium heat. Whisk in flour until smooth; season to taste.
  6. Let roulade rest for 10 minutes before slicing. Serve with gravy.
