  • 2 tablespoons taco seasoning
  • ¾ cup water
  • 2 ½ cups dry shell pasta (macaroni or rotini)
  • 1 cup shredded pepper jack cheese (divided)
  • 1 cup shredded sharp cheddar cheese (divided)

Instructions

  1. In a large skillet, heat one tablespoon of vegetable oil over medium-high heat. Add diced onions and sauté until soft, about 3-4 minutes.
  2. Add ground turkey and minced garlic; cook until turkey is browned, about 5 minutes. Drain excess liquid.
  3. Stir in salsa, taco seasoning, and water; bring to a boil. Cover and reduce heat to low, simmering for about 10-15 minutes until sauce thickens.
  4. Cook pasta according to package instructions until al dente; drain well. Stir cooked pasta into the meat mixture until evenly coated.
  5. Sprinkle remaining cheese over the pasta, cover skillet, and let it melt for about three minutes.
  6. Serve immediately with optional garnishes like sliced green onions or diced tomatoes.
