  • 12 oz canned chickpeas (drained)
  • 1 tsp ground cumin
  • 1/2 tsp freshly ground black pepper
  • 1 tsp sea salt
  • 2 green onions, minced
  • 2 cloves garlic, minced
  • 1/2 cup all-purpose flour (or chickpea flour)
  • 1 egg
  • 1/4 cup grapeseed oil (or other neutral oil, for frying)
  • 1/2 cup Greek yogurt (or sour cream)
  • 1 tbsp lemon juice (from 1/2 lemon)
  • 2 tbsp fresh dill, minced
  • 1 clove garlic, minced
  • 1 tsp sea salt

Instructions

  1. Start by draining your canned chickpeas and patting them dry. In a large bowl, mash the chickpeas until they are coarse but still have some texture.
  2. Next, add in the ground cumin, black pepper, sea salt, minced green onions, minced garlic, flour, and egg. Mix these ingredients well until it reaches a dough-like consistency.
  3. Pour grapeseed oil into a frying pan over medium-high heat. It should be hot enough that a small piece of the mixture sizzles when added.
  4. Using about three tablespoons of your mixture per patty, shape them gently before placing them into the hot oil.
  5. Fry each patty for about 3–4 minutes on each side until they turn golden brown and crisp. Transfer them to a wire rack to keep crisp.
  6. In a separate bowl, combine Greek yogurt, lemon juice, fresh dill, minced garlic, and sea salt. Mix well and let it chill until ready to serve.
  7. Serve warm chickpea patties alongside the tangy yogurt sauce.
