  • ¼ cup unsalted butter, cold and cut into small pieces (for streusel topping)

Instructions

  1. Preheat oven to 375°F (190°C) and line a muffin pan with paper liners.
  2. In one bowl, whisk together flour, sugar, baking powder, cinnamon, and salt.
  3. In another bowl, combine egg, milk, melted butter, and vanilla.
  4. Pour wet ingredients into dry and mix gently until just combined.
  5. Fold in chopped apples.
  6. For the streusel topping, combine flour, brown sugar, and cold butter until crumbly.
  7. Divide batter among muffin cups and top with streusel.
