  • 2 tablespoons granulated sugar
  • 4 tablespoons unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1/2 cup sour cream
  • 1/2 cup heavy cream
  • 1 vanilla bean, split and seeds scraped
  • 1 teaspoon vanilla extract
  • 1/4 cup granulated sugar (for topping)

Instructions

  1. Preheat your oven to 325°F (160°C) and line a standard muffin tin with cupcake liners.
  2. In a small bowl, mix graham cracker crumbs, sugar, and melted butter. Press about 1 tablespoon into each liner to form the crust.
  3. In a large bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, followed by sour cream, heavy cream, vanilla bean seeds, and vanilla extract until well combined.
  4. Pour the cheesecake batter evenly into the prepared crusts and bake for 20–25 minutes until set with a slight jiggle in the center.
  5. Let cool at room temperature before chilling in the refrigerator for at least 2 hours.
  6. Before serving, sprinkle sugar on top of each cupcake and caramelize using a kitchen torch.
