Ingredients

Scale
  • 3 ½ cups all-purpose flour
  • ¼ cup granulated sugar
  • 1 teaspoon active dry yeast
  • 1 cup warm milk (about 110°F)
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ¼ cup unsalted butter, melted
  • 1 teaspoon salt
  • Vegetable oil, for frying
  • Powdered sugar, for dusting

Instructions

  1. Activate the yeast by combining warm milk and active dry yeast in a small bowl; let sit for 5-10 minutes until frothy.
  2. In a large mixing bowl, whisk flour, sugar, and salt. Create a well in the center; add yeast mixture, eggs, melted butter, and vanilla extract. Stir until sticky dough forms.
  3. Knead dough on a floured surface for 5-7 minutes until smooth and elastic.
  4. Place dough in a greased bowl; cover with a kitchen towel and let rise in a warm place for 1-1.5 hours or until doubled in size.
  5. Roll out risen dough to about ½-inch thickness; cut into squares measuring approximately 2×2 inches.
  6. Heat vegetable oil in a deep pot to around 350°F (175°C). Fry beignets in small batches for about 1-2 minutes on each side until golden brown.
  7. Remove with a slotted spoon; drain on paper towels and dust with powdered sugar before serving.
