  • 1/2 cup (115g) vegan butter or margarine (chilled)
  • 3 tablespoons (35g) granulated sugar (brown sugar or coconut sugar)
  • 23 tablespoons cold water (as needed)
  • 3 tablespoons (40g) granulated sugar (brown sugar or coconut sugar)
  • 2 teaspoons ground cinnamon
  • 1 tablespoon (8g) all-purpose plain flour (or gluten-free flour)
  • 45 apples (of choice, cored)
  • Dash of lemon juice (optional)
  • 2 tablespoons (30g) vegan butter or coconut oil (melted)
  • 3 tablespoons (60g) apricot jam (any light-colored jam)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9-inch loose-bottom tart pan.
  2. In a mixing bowl, combine flour and chilled vegan butter until crumbly. Add sugar and cold water gradually until a dough forms.
  3. Roll out the dough on a floured surface to about 1/4 inch thick and place it in the prepared tart pan.
  4. Core and slice apples thinly. Toss them with cinnamon, sugar, and flour until coated.
  5. Layer the apple mixture in the pastry shell and drizzle melted vegan butter on top.
  6. Bake for 70 minutes until golden brown. Cool slightly before glazing with apricot jam mixed with lemon juice.
