Ingredients

  • Corn on the cob (or frozen/canned corn)
  • Vegan butter
  • Onion
  • Garlic
  • Dried thyme
  • All-purpose flour
  • Vegetable stock
  • Canned light coconut milk
  • Canned coconut cream
  • Potatoes
  • Bay leaf
  • Green onions

Instructions

  1. Slice the corn off the cob and set aside.
  2. In a large pot, melt vegan butter over medium heat. Sauté chopped onion until softened.
  3. Add garlic and thyme; sauté until fragrant.
  4. Stir in flour and gradually whisk in vegetable stock, coconut milk, and coconut cream until smooth.
  5. Add cubed potatoes, corn cobs, and bay leaf; bring to a simmer.
  6. Cook covered for about 25 minutes until potatoes are tender.
  7. Remove cobs and bay leaf; add fresh corn kernels and cook for an additional 5 minutes.
