  • 34 tbsp smooth peanut butter
  • 34 tbsp agave syrup (or maple syrup/powdered sugar)
  • 1 tsp vanilla paste or extract
  • Pinch of salt
  • 100 grams 70% dark chocolate
  • 400g tin full-fat coconut milk

Instructions

  1. Blend the silken tofu, peanut butter, agave syrup, vanilla extract, and salt in a blender until completely smooth.
  2. Spoon the mousse into ramekins or jars and chill in the refrigerator.
  3. Melt dark chocolate using a microwave or double boiler. Mix in the creamy part of the coconut milk until well combined.
  4. Pour the ganache over the chilled mousse and let it set in the fridge for about an hour.
