  • 1/2 Tablespoon cornstarch
  • 3 Tablespoons vegan butter
  • 1/2 cup chopped pecans
  • 2 Tablespoons brown sugar
  • 2 Tablespoons maple syrup
  • 1 teaspoon vanilla bean paste (or vanilla extract)
  • 1/2 cup room temperature vegan butter
  • 1/2 cup + 2 Tablespoons sugar
  • 1/4 cup light brown sugar
  • 1 flax egg (1 Tablespoon ground flaxseed mixed with 3 Tablespoons water)
  • 1 1/2 cups + 3 Tablespoons all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt

Instructions

  1. Prepare your flax egg by mixing ground flaxseed with water and allowing it to thicken for about 10 minutes.
  2. In a large bowl, cream together room temperature vegan butter and sugars until fluffy. Add maple syrup, vanilla bean paste, and flax egg; mix well.
  3. In another bowl, whisk together flour, baking powder, salt, cinnamon, and cornstarch.
  4. Gradually combine dry ingredients with the wet mixture; fold in chopped pecans gently.
  5. Chill the dough covered in plastic wrap for about 30 minutes.
  6. Preheat oven to 350°F (175°C). Roll dough into balls and coat them in extra sugar before placing on a lined baking sheet.
  7. Bake for about 12-15 minutes until golden around the edges. Let cool on the sheet before transferring to a wire rack.
