  • 1/2 cup pumpkin puree
  • 3/4 cup brown sugar
  • 1/4 cup white sugar
  • 1 1/3 cups all-purpose flour
  • 1 teaspoon pumpkin pie spice
  • 1 teaspoon salt
  • 1/2 teaspoon baking soda
  • 3/4 cup chocolate chips

Instructions

  1. In a mixing bowl, whisk together melted coconut oil, pumpkin puree, brown sugar, and white sugar until well combined.
  2. Gradually add in flour, pumpkin pie spice, salt, and baking soda. Mix until a smooth but slightly sticky dough forms. Fold in half of the chocolate chips.
  3. Cover the dough and chill in the refrigerator for at least one hour (up to 24 hours for enhanced flavor).
  4. Preheat your oven to 325°F (165°C). Line a baking tray with parchment paper.
  5. Scoop about 1.5 tablespoons of dough onto the tray, leaving space between each cookie. Flatten slightly and add remaining chocolate chips on top.
  6. Bake for 12-14 minutes until edges are golden but centers remain soft. Allow cooling on the tray before transferring to a wire rack.
