- 1/2 cup pumpkin puree
- 3/4 cup brown sugar
- 1/4 cup white sugar
- 1 1/3 cups all-purpose flour
- 1 teaspoon pumpkin pie spice
- 1 teaspoon salt
- 1/2 teaspoon baking soda
- 3/4 cup chocolate chips
- In a mixing bowl, combine melted coconut oil, pumpkin puree, brown sugar, and white sugar. Whisk until smooth.
- Add in flour, pumpkin pie spice, salt, and baking soda. Mix until you have a smooth but slightly sticky dough. Fold in chocolate chips.
- Cover the bowl with plastic wrap and chill the dough for at least one hour in the fridge.
- Preheat oven to 325°F (160°C) and line a baking tray with parchment paper.
- Scoop about 1.5 tablespoons of dough onto the tray, leaving space between cookies.
- Bake for 12-14 minutes until edges are lightly browned but centers remain soft.
- Allow cookies to cool on the tray for about 5–10 minutes before transferring to a wire rack.
